Sugar
syrup, to a layman, is just sugar & water-- but that’s not all.
Syrups can have varying concentrations, degree of sweetness, pH
levels, stability characteristics, viscosities, ash values,
diverse contents of reducing & non reducing sugars, as
also variable taste, small & color. Sugar syrups
characteristics vary for different industries depending upon
applications and industry e.g. bakery, pharmaceutical
, beverage, confectionary. |

Syrups can
be divided into fully inverted, or partially inverted to leave
part of the original sucrose unchanged. depending upon color
syrup can be from absolutely transparent to dark color as that
of chocolate. Concentration ( total solids % by weight) can vary
from 55% to 80 %. Flavor can vary from negligible to strong
tropical sugar cane flavor. |
