Crystallization or granulation in high concentration /
supersaturated syrups is natural conversion from liquid state into crystalline solid
state. Pure sucrose ( ordinary sugar ) solution becomes
supersaturated on ambient temperature i.e. 25 deg at 67%
concentration where as inverted solution having glucose,
fructose and sucrose gets supersaturated above 73% concentration.
There is a eutectic point depending upon temperature,
concentration and composition of various sugars.
The
monohydrate form of glucose can serve as seeds or nuclei, which
are the essential starting points for the formation of crystals.
Other small particles, even air bubbles, can also serve as
seeds for the initiation of crystallization.
Crystallization
leads to dilution and darkening of the liquid phase which is
very undesirable taste and product attributes. It is
imperative for some syrups / squashes / honey to
have very high concentration of various sugars. |

damage or change in the inherent character the product
crystallization is prohibited. Best part of the technology
