Technology for sugar-stevia health sweetener

 (technology abstract)

Stevia is a natural, non-caloric, sweet-tasting plant used around the world for its pleasant taste, as well as for its increasingly researched potential for inhibiting fat absorption and lowering blood pressure. Stevioside, the main ingredient in stevia, is a high intensity sweetener, 250-300 times sweeter than sucrose. It is isolated and purified from the leaves of the Stevia plant (Stevia rebaudiana Bertoni), where it is present at levels up to 13%. Out of all chemical sweeteners ( aspartame , sacherrine , sucralose etc.) and natural sweeteners ( sucrose , glucose , fructose etc. )  stevia  can be considered as safe for health as any other natural sweetener and as less in calories as chemical sweeteners.

We all have a craving for a sweet taste and often satisfy this craving with sugar or fat-filled foods. Hence, stevia can be advantageous to practically everyone whose diet contains sweeteners. Although stevia can be helpful to anyone, there are certain groups who are more likely to benefit from its remarkable sweetening potential. These include diabetics, those interested in decreasing caloric intake, and children.

Pure Stevia has often a bitter after-taste and being an intense sweetener, the exact measure of volumes at application/ consumption point becomes a tedious and non user-friendly. To overcome this, stevia is ideally blended with small quantities of sucrose for a base to make sugar twice or 4 times sweeter without increasing calories/ quantity consumed or compromising on taste.

Bottlenecks faced in blending sucrose and stevia are-- separation of two during storage and uneven mixing. Sugarindia has developed technology for a stevia-sucrose mix, which is free-flowing & convenient for home-use as well as industrial applications.
