Natural Brown sugars such as demerara, muscovado,
turbinado etc are healthy sugars where the color and flavor
that is naturally present in sugarcane has not been removed.
With people turning more and more health conscious, consumption
level of these sugars is growing exponentially.
Conventionally, these
sugars have hygroscopic and have lot of molasses so have sticky texture;
making it difficult to handle and packing also undesirable by
the end-user.

A customer
at a coffee shop likes demerara that is
distinctly dry and preferably free flowing, has a golden sparkle of champagne, and
a crunchy texture that's good for sprinkling and baking. The
catch is in making the brown & demerara sugars of a relatively
dry and free-flowing
quality without compromising on their taste or healthy
attributes.
