| Crème Brulee with Vanilla Pods

3 oz Caster Sugar
5 Egg Yolks
2 Vanilla Pods
2 fl oz Milk
15 fl oz Double Cream
8tsp Demerera Sugar |

| Instructions |
Preheat oven to 150oC
Mix the castor sugar and Egg Yolks together in a bowl.
Split the Vanilla Pods in half and scrape the seeds out into the Milk and Cream.
Pour the cream and milk into the yolks, mix well, then pass through a strainer.
Divide the mixture between 8 small ramekin dishes and cook in a Bain Marie (water in a container) for about 40 minutes.
Allow to cool and set, place in fridge.
Place the Demerera Sugar on top of the set Crème Brulee and either burn with a small blowtorch or place under the grill until golden brown. |
