| Mincemeat cake

| Ingredients |

1lb vegetarian mincemeat
5oz soft margarine
5oz
muscovado
sugar.
2 eggs
8oz self-raising flour
3oz sultanas
3oz currants |

Instructions
Pre-heat oven to gas mark 3/325f/160c
Put 12oz mincemeat and rest of ingredients into a large bowl and mix well
Spoon into a greased and base-lined deep 8 inch round cake tin.
Level the surface then bake for 1 hour
Allow to cool in the tin then turn out carefully. Peel off lining paper
Store in an airtight tin for up to 2 weeks
Serve cut into slices. |
