| Red Onion- Thyme Chutney (Dip Sauce)

| Ingredients |

4 red onions, finely sliced
50g butter
1-2tbsp olive oil
4 sprigs thyme
25g light
muscovado
sugar.
2tbsp balsamic vinegar |

Instructions
Put the red onions in a pan. Add the butter, olive oil and put over a medium heat to melt the butter and start the onions off frying. Add the thyme springs, turn down low, cover with a lid and cook for 20min, stirring every now and then, making sure the onions aren't burning. If any are sticking on the bottom, add a splash of water to loosen.
Add the muscovado sugar and balsamic vinegar and stir in. Increase the heat and cook for 5-10min. Season with salt and freshly ground black pepper and stir in.
Serve with walnut bread and Alham farm mozzarella cheese. |
