Icing-
: Mix the almonds and Dhampure Caster Sugar together until smooth. Add the flavouring.
2 : Put a little egg at a time into the mixture and using a knife, mix to a soft dough. When the mixture clings together,
kneading should then continue by hand. A good almond paste should be dry and firm and free of cracks.
3 : Cover the top and sides of a rich cake before coating with a firm icing. This gives a smooth surface to which the icing can be applied easily. It also prevents discolouration.
Almond paste can also be used for making decorations and coloured if required by adding a few drops of colour at the end of the kneading process
