Technology for storage and packaging of 'chemical free' jaggery/ panela.

Jaggery or “Gur” or whole sugar is a pure, wholesome, traditional, unrefined, whole sugar. It contains the natural goodness of minerals and vitamins inherently present in sugarcane juice & this crowns it as one of the most wholesome and healthy sugars in the world. Jaggery has 28 grams per kilogram of mineral salts, as against only 300 milligrams per kilogram is found in refined sugar. Jaggery is often called the 'medicinal sugar. So much so, you can become an emergency doctor with Jaggery. It is also very useful in health problems like dry cough, cough with sputum, indigestion, constipation etc. It purifies the blood, prevents rheumatic afflictions and disorders of bile and possesses nutritive properties of high order.  Being completely natural product it's keeping quality is very poor and needs very specific conditions.

Sugarcane variety from which jaggery is prepared, cane juice composition, jaggery composition esp. with respect to waxes & salt content, moisture barriers, and other factors have to be analyzed for optimization of packaging  and storage of jaggery.
For storage, the optimization of physical factors of humidity, temperature, etc have to be regulated to maintain quality of jaggery. After extensive research and repeated trials, the ideal process is developed to package and store jaggery.
